Tales from Cookie Dough

Mooorning, I'm Cookie Dough, the white longhorn with black spots. The pretty one in the picture. Anyway, I'm going to tell you all what's going on at Welcome Home Retreat. I'm the next door neighbor, so I can tell you everything!



All these lovely ladies keep showing up and bringing loads of bags and boxes full of scrapbook, crafting, and quilting supplies. Sometimes they just bring a book to read. One lady sat in the big comfy chair in the living room and spent the whole day knitting! Quite a few of these ladies  come over to the fence to take my picture, I'm very photogenic. There are paintings of me hanging in Welcome Home Retreat. Of course my sisters are always "horning" in on my photos.


I suppose that I should tell you a little bit about Welcome Home Retreat. It is a wonderful place for ladies to scrapbook, quilt, craft, or just relax. Sheila Strickland is the owner and visionary for this beautiful place.

Sandy Dailey is co-property manager. She cares for the outdoor areas. Sandy also embosses albums and Jackie is the massage therapist. They all work together to make the ladies time here memorable.

Today I'm going to share a couple of recipes. First Cranberry White Chocolate Cookies. Jackie baked these for the Christmas Day Crop and everyone loved them! Easy to make and so YUMMY.

Cranberry White Chocolate Cookies

Preheat your oven to 350
Ingredients
3/4 cup unsalted butter softened
1/2 cup brown sugar
1/2 cup organic sugar
1Tbs. Vanilla
1 egg
2 cups organic unbleached flour
2 tsp. cornstarch
1 tsp. baking soda
1/8 tsp. salt
1 cup dried cranberries
1 cup white chocolate chips

In a large bowl beat together the butter and sugars until light and fluffy. Add the vanilla and egg and mix until combined. In another bowl whisk together flour, cornstarch, baking soda and salt. Add the flour mixture to the sugar mixture and beat at low to medium speed until dough forms a soft ball. Add dried cranberries and white chocolate chips. Mix them in by hand. Wrap dough in plastic wrap and refrigerate for at least an hour. Line cookie sheet with parchment paper. Roll tablespoon sized balls of dough and place about 2 inches apart. Bake 8-10 minutes. Makes about 2 dozen cookies

The other recipe I want to share with you is the Ranch and Bacon Cheeseball  that Don made for the Ladies to snack on as they worked on their projects.

Ingredients

2  8oz packages cream cheese softened
1 package dry Ranch Dressing
1 cup Colby Jack cheese shredded
3oz cooked bacon finely chopped

Use a mixer to slightly whip the cream cheese. Add the Ranch dressing and mix thoroughly. Fold in shredded cheese. Form mixture into a ball and roll in chopped bacon. Wrap cheeseball in plastic wrap and refrigerate until firm. Serve with crackers.
You may substitute Cheddar or a Cheddar mix for the Colby Jack
Chopped nuts can be substituted for the bacon
